Organic Food Formula Scale-Up

I’m refining a food formulation that must remain 100 % EU Organic compliant while moving from benchtop trials to a clean, well-documented pilot batch. My top priority is maintaining impeccable hygiene throughout production—recipes, SOPs, and any equipment recommendations must reflect that.

Here’s what I need from you:

• Review and, if necessary, tweak the current formula so it stays stable and meets EU Organic regulations.
• Translate lab-scale quantities into a clear, scalable process flow (ingredient prep, critical control points, hold times, etc.).
• Draft concise hygiene SOPs tailored to the proposed equipment line, highlighting surfaces, sanitation cycles, and allergen separation.
• Prepare a pilot-batch protocol (yield ≈ 25–50 kg) that will let us test overall product feasibility; include analytical checks and pass-/fail criteria for taste, texture, micro load, and shelf-life indicators.

Acceptance criteria
– Formula remains unchanged in sensory profile and passes EU Organic audit checklist.
– All CCPs for hygiene are identified with monitoring logs ready to print.
– Scale-up sheet gives exact weights, temperatures, and mixing times for each step.
– Pilot run documents allow a plant operator to execute without further clarification.
