The goal is to formulate a shelf-stable liquid that behaves like cow's/Buffalo's milk when run through standard milk-testing analyzers, yet contains no perishable dairy components. The solution must be tunable so that I can call for any value within these working windows:
• Fat: 2.5 % – 12 %
• SNF: 6.5 % – 10 %
• Protein: 3 % – 6 %
Accuracy should match typical calibration-grade samples (±0.05 % for fat, ±0.1 % for SNF and protein) and hold that performance for at least six months at room temperature.
Key considerations
The mimic has to flow, foam and disperse pigments just as fresh milk does, without clogging or coating optical or ultrasonic sensors. Viscosity, density and dielectric properties therefore need to sit inside the normal dairy range. Food-safe ingredients only; no cold-chain requirements.
Deliverables
1. Lab-scale formulation and step-by-step preparation protocol
2. Analytical data confirming the stated fat, SNF and protein values plus viscosity and density benchmarks
3. Stability study plan (accelerated and ambient) with interim results for at least four weeks
4. One 1-litre pilot batch (or concentrate with reconstitution guide) shipped to my address
Acceptance criteria
The pilot sample will be run through two Lactoscan devices and an ultrasonic fat analyzer. Readings must fall inside the requested windows and remain consistent after 30 consecutive tests.
Relevant tools & techniques may include emulsion science, GRAS hydrocolloids, refractometry, Karl Fischer moisture analysis, and FTIR or NIR calibration curves. Feel free to suggest alternative approaches as long as they meet the accuracy and stability targets.
