Extract PDF Form Data to Excel

I have a batch of PDF forms filled in with text-only answers. The catch is that the information was typed into open, unlabeled spaces, so there is no tidy table or predefined field to grab; each file looks slightly different even though the same questions were asked. I need every answer lifted out, organised into consistent column headers of my choosing, and delivered in one clean Excel workbook that I can plug straight into our reporting dashboards.
