Automate PDF Fetch & Conversion

I need a small, reliable utility that automatically fetches PDFs, extracts the meaningful data inside them, and then converts that data into a more usable format such as CSV or JSON. My priority is accuracy during extraction and a clean, machine-readable output at the end.

The workflow I have in mind is straightforward: the tool receives a list of PDF locations, pulls each file, performs the extraction without manual intervention, and finally writes the converted results to a local folder I specify. Ideally it should run headless, accept both single-run and batch modes, and log any failures so nothing slips through unnoticed.

Python is perfectly fine—especially if you leverage libraries like PyPDF2, pdfplumber, or similar—but I’m open to another language if you can demonstrate equal or better reliability. Clean, well-commented code and a quick read-me that shows me how to fire up the script are essential deliverables. If you can include a brief sample output from one of your own test PDFs, that will serve as my acceptance check that the conversion piece works as described.
