Transcribe Old Family Cookbook

I have a family cookbook I'd like to have transcribed into an editable text document (Google Docs preferred). I'll be using the document to make a new version in InDesign, so the document would need some light formatting (titles & subtitles, ingredients separated from the method, etc.) to make the transition easier.

I've taken pictures of each of the pages - there's about 150, but not all of them are recipes. There's quite a few section/title pages, some with basic cooking tips and charts, and a few with feel-good poems, quotes, anecdotes etc. The book has two different Tables of Contents, but those can be omitted since a new one will be created when I make the new version.

Also, ideally no AI/automated services would be involved in this. I would like to pay a real person for their work. I just don't have the time/ability myself to do this.
