Retype Printed Docs into PDFs

I have a batch of images that contain straightforward printed documents. I simply need their text retyped, given a quick proofread for obvious typos, and then saved as standard PDFs. Please keep the layout minimalist—plain paragraphs with clear headings if they exist, no attempt to mimic original fonts or complex spacing. I do not require any special features such as searchability, embedded text layers, or form fields; an ordinary read-only PDF is perfect.

Deliverables:
• One clean PDF for each source image
• The accompanying editable text file (Word, Google Doc, or similar) for my records
