Objective:
Develop a low-cost, shelf-stable freeze-dried fermentation starter powder containing selected microorganisms and food-grade acidifying components for household preparation of Idli/Dosa batter.
Concept:
The end user will add one pre-measured pouch to prepared Idli/Dosa batter. The powder should provide consistent fermentation, acidity and batter development without requiring traditional overnight fermentation conditions.
Project Scope:
Selection of suitable food-grade lactic acid bacteria and/or yeast
Selection of suitable food-grade acidulant(s)
Development of a stable freeze-dried powder formulation
Optimization of microorganism concentration and acidification
Determination of the required dosage per kg of batter
Evaluation of fermentation time and temperature
Optimization of pH, acidity, aroma, taste, batter volume and texture
