PDF Product Text Conversion

I have a collection of product PDFs that I need rebuilt in Microsoft Word. The source files are almost entirely plain text, so there is no complex formatting to preserve; I only want a clean, text-only document that keeps basic heading structure (think Heading 1 for main sections, Heading 2 for sub-sections) and strips out everything decorative.

Accuracy is more important than speed: the wording, spelling and line order must match the original PDFs exactly, but you may simplify fonts, margins and spacing as long as the logical flow is unchanged. If a PDF happens to contain a small table, include it in Word using Word’s normal table tool—no images of tables, please.

Please let me know how many pages you can handle per day and the method you prefer (manual re-typing, copy-paste with clean-up, or an OCR workflow followed by proofreading). Final deliverables are the completed Word file(s) saved in .docx format and ready for me to review.
