Organized PDF Data Transfer to Excel

I have a set of PDFs whose contents—straightforward text and numbers—are already laid out in neat, highly structured tables. All I need is for that information to live in an Excel workbook, arranged in simple, standard columns and rows so I can sort, filter, and run quick calculations without fighting with formatting.

Speed is welcome, but accuracy is critical. Every value must match the source exactly, including any decimal places or units shown in the files. Typos, misplaced rows, or skipped entries will break the downstream reports that depend on this sheet.

Deliverable:
• One clean .xlsx file containing every record from the PDFs, with each original column preserved in the same order across all pages.
