Extract PDF Invoice Data

I have a batch of roughly 50–200 PDF invoices that need to be transformed into a clean, well-structured Excel spreadsheet. For every invoice you will capture three key areas:

• Customer details (name, address, contact information)
• Invoice amounts (sub-totals, taxes, grand total)
• Product details (item descriptions, quantities, unit prices)

Accuracy is paramount—I will be spot-checking entries against the source PDFs, so the final sheet must align perfectly with the originals. Please keep a consistent column layout throughout the workbook and preserve any currency symbols and number formats already present on the invoices.

You are free to use whichever tools you prefer—Adobe Acrobat, OCR utilities, or manual entry—so long as the delivered file is a single Excel workbook that I can filter and sort without issues.
