Email Text Data Capture

I have a growing archive of emails that contain important text-based information I need extracted and entered into a structured file. Every datum you work with will come directly from those emails—no numerical fields involved, just clean, accurate text capture.

Here is what I need from you:
• Open each email and copy the required text fields (subject, sender, date, body excerpts or any tags I specify).
• Enter the extracted content into a single, well-organised file. I am flexible on the final format—CSV, Excel, even a small database—so feel free to propose whichever you work fastest in, provided the result is easy for me to sort and filter later.
• Maintain consistency in spelling, spacing and capitalisation, remove obvious duplicates, and flag any missing or unreadable items.

I will supply you with access to the mailbox, clear field definitions and a short sample so you can match the style before proceeding with the full batch.
