Copy-Type Text From PDFs

I have a set of photos of text that I saved on my phone and exported as PDFs. I need every word in those images re-typed accurately and delivered as a clean plain-text (TXT) file with no extra formatting—just the text exactly as it appears, including punctuation and line breaks.

Some pages are perfectly clear, while a few show the usual mobile-capture issues such as slight shadows or skew. An eye for detail and a habit of double-checking spelling are therefore essential. If any word is illegible, mark it and let me know rather than guessing.
